Two different types of soil, we have wihte clay, mixed with sand in the bottom of the valley and sandy soil in the skirt of the moutain. The vines are surrounded by permanent cover crop that helps to make expression of the grapes more authentic. Grapes are managed by gravity to avoid damage of skins and seeds. Pago Casa Gran uses native yeast for fermentation. Pago Casa Gran only uses its own estates grapes which are Garnacha tintorera, Syraz, Monastrell, Petit Verdot.
Wine Making:
Fermentation and maceration in stainless steel tanks(temperature controlled). Each variety has been processed by its own with native yeast. Long and soft extraction of tannins, punching down the cap manually. Malolactic fermentation in stainless steel tanks (temperature controlled)...After malolactic fermentation part of the wine the wine is aged on the lees in the tank and part is aged in French oak barrels for a maximum of 12 months(temperature controlled).
